台湾の槓子頭（ガントートウ）
歯が欠け、指の皮がはがれるほど硬い中国のパン
「槓子頭（ガンツートウ）」
池袋で台湾料理教室を開いている陳さんが手作りをした
台湾の硬いパン『槓子頭（ガンツートウ）』を見せてくれました。
パンのに上に打ってあるスタンプも手作りです。
「お母さん（陳さんの奥さん）の大好物でね。台湾に帰れないから家で手作りしたんだよ。
私たちが幼いころ、外商人（ガイショウニン）と呼ばれる中国本土から台湾に移り住んできた人たちがこの硬いパンを売っているのをよく見かけてね。今でも台湾に行くとお店があるんだけど、昔から食べている懐かしい味だから。」
と陳さんが話してくれました。
『槓子頭（ガンツートウ）』はそのまま食べると歯が欠けてしまうほど堅いため、叩いて砕いてから、中国では羊や山羊のスープに。台湾では豚のバラ肉と山椒のスープに浸して食べます。
自分でちぎろうとすると、指の皮がはがれてしまうほど、とにかく硬いので注文すると、お店の人が切ってスープに浮かべて出してくれます。
『槓子頭』はかの有名な三国志の諸葛孔明が生まれた中国の山東省発祥です。
保存食としてとても優れているためその昔、兵士さんたちの携帯食として利用されることもありました。パンの真ん中に穴を開け、荷車の車輪や馬鞍（くら）の横に麻の縄でくくりつけてで持ち運んでいました。
硬くなったパンは
水で冷やしてふやかすと、香ばしさが増し、
温かいスープに浮かべるとご馳走感が出ます。
これだけ硬いのだから、捏ねるのもさぞかし大変なのだろうと思っていたら、案の定、手では中々捏ね進まず、木のような棒で圧縮するようにして作ります。
陳さんのお母さん、お父さんからの深～いふか～い愛情入りのパンをもらって幸せそうでした。

"My wife's favorite ""槓子頭(Gantsutou) "" was handmade by Chen, who runs a Taiwanese cooking class in Ikebukuro. "The stamp on the 槓子頭(Gantsutou) " is also handmade too.
"When he was young, he often saw people who moved to Taiwan from mainland China called foreign merchants selling hard breads called "槓子頭(Gantsutou)”. We still have stores all over Taiwan.
Since 槓子頭(Gantsutou) is a dry bread that was born in Shandong Province, China, and if eaten as it is, the teeth will be chipped, so it is eaten after soaking it in sheep and goat soup.
"In Taiwan, we often drink pork belly and Chinese pepper soup."
If you order it, the staff will cut it and serve it floating on the soup.

When you order, they ask you if you are served in a bowl, or if you want the shop staff to come and serve it floating on the soup.
However, as the skin of the fingers gets peeled off, people who choose to do it themselves because it is hard need to be patient. By the way, "Operating Head" is an excellent preserved food, so it was carried by soldiers a long time ago.
